The main difference between the brands’ Dutch ovens mostly comes down to the interior enamel. Lift the lid of a Le Creuset Dutch oven, and you’ll find a super-smooth sand-colored interior enamel. Lift the lid of a Staub, and you’ll see a slightly textured black interior enamel. Some home cooks prefer the dark, textured enamel because it offers better searing capability overall and won’t show as much wear over time, but you really can’t go wrong with either.
