Udatsu is the rare high-end sushiya that can accommodate vegetarians with a special menu. Both courses, vegetable and seafood, are satisfying: Chef Hisashi Udatsu incorporates texture and umami for the delicate vegetable sushi, frying some vegetables and simmering others in kombu kelp dashi.
